Recipe - Cashew Queso (Cauliflower)
Ingredients
- 1 head of cauliflower, florets
- 1 cup raw cashews (for milk), with 3 cups water
- 1/2 cup raw cashews
- 3 cups cashew milk
- 3 cloves garlic minced
- 1/2 cup nutritional yeast
- 1/2 medium onion diced
- 1 14.5 oz can of diced tomatoes drained
- 1 4 oz can of diced green chili
- 2 tbsp apple cider vinegar
Spices
- 2 tsp sea salt
- 2 tsp mustard powder
- 1 1/2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp turmeric powder optional, for color
Directions
- bake cauliflower to roast/soften
- fill blender to 3 cups water
- add 1 cup cashews
- blend until fully combined

set aside
- add oil and garlic powder to pot, cook until bubbles
- saute onion and jalapeno
- add spices and continue to saute
- add diced tomatoes
- add cauliflower, mix
- continue to saute
- add cashew milk
- bring to a boil

reduce to simmer, stir frequently until cauliflower is soft
- transfer to blender
- add nutritional yeast and cashews

blend fully
- serve
